Egg white salad on a bed of lettuce!!

Recently I have been experimenting a lot with egg white.Trying to make salads or scrambled egg out of it.Since I want to develop a bit of muscle mass and need food rich in proteins,my diet has a lot of egg whites and cottage cheese these days.

Egg white consists primarily of about 90% water into which is dissolved 10% proteins (including albumin, mucoprotien and globulin). Unlike the yolk, which is high in lipids (fats), egg white contains almost no fat, and carbohydrate content is less than 1%. Egg whites contain just over 50% of the protein in the egg.

Here is the salad made by me for dinner.

I used a handful of chopped  green and yellow zucchini, red bell pepper, purple cabbage, lettuce, red onion and 2 cloves of garlic finely chopped .3 hard-boiled eggs.Basil leaves for garnishing.1 tablespoon of olive oil, herbs(basil or parsley) and salt to taste.

Saute the onion and garlic in olive oil, when the onion turns translucent add the other vegetables.

Add salt and herbs and mix well.

Put the lettuce on a plate and pour the vegetables over it.Cut the boiled eggs into pieces, you can mix the egg with the veggies or simple put over the veggies.I put it on the sides just for the display.Sorry for the till laddoo as  I ran out of  black olives, so just used them  for the display.

The salad is very healthy and easy to make.If you do not want to add egg,you can just have the veggies.Toss the veggies in some pesto or just have with some hummus or avocado dip.
