I just love Thai green curry and cannot have enough of it.Never been able to try it out ,coz of some reason or the other.So today when I had almost all the ingredients,I finally tried it out.Believe it or not it turned out just the way they serve in all those fine dinning restaurants.
Since it’s green curry,you can add all the greenies.I have tried this dish a lot of times so I kind of experimented with the veggies.I sort of had an idea what veggies would go with it.I used whatever I thought would go well and thankfully it came out well.There is no rule as to what should be used.These are the vegetables I used-
1 Zuccini,1 small broccoli,1 small bowl of green peas,french beans,lemongrass,1 packet of tofu,1 onion,garlic,coconut milk and Thai green curry paste.You can add capsicum,carrot,basil leaves etc too.
You can make the paste at home as well.Will be adding that soon.
Cook the green curry paste with 2 tbsp of olive oil for about 2 min.Then add the finely chopped onion and garlic.Cook till the onion turns translucent.I boiled the veggies so they become a bit soft.Keep them slightly crunchy.
Add the veggies and 1 bowl of water and salt to taste and cook on low flame for 5 min.Then add the coconut milk and cook for another 5 min.
And here you have,the yummilicious Thai green curry.
Serve it with rice.Garnish with some basil leaves or dried basil.
